There is a widespread misconception that carbohydrates are sweet and cause weight gain. Glycochemistry, which began in ancient times with sugar and starch, has now expanded to a vast range of related fields, including microbial infections and blood types, with the latest theme being the role of sugar chains in molecular recognition. This lecture will begin with basic carbohydrate chemistry and provide an overview of the various structures and functions of carbohydrates, proteins and enzymes related to carbohydrates, and the relationship of sugar chains to life phenomena. |

This class is an intensive lecture. [Part 1] 1. Basics and nomenclature of carbohydrate chemistry 2. Structure, names, and isomers of monosaccharides 3. Various monosaccharides, sweetness levels, sugar alcohols, etc. 4. Oligosaccharides (1)/Various oligosaccharides Summary and review [Part 2] 5. What is transglycosylation reaction? 6. Oligosaccharide (2), dental caries and sugar transfer reaction 7. Oligosaccharides (3) - Functional oligosaccharides that are not easy on the stomach 8. Polysaccharides, starch and cellulose 9. Cell wall polysaccharides: hemicellulose, pectin, chitin, peptidoglycan 10. Plant biological defense mediated by sugar chains ・Phytoalexins and carbohydrate elicitors Summary and review [Part 3] 11. The world of complex carbohydrates/What are glycoproteins? ・Sugar nucleotides and glycosyltransferases 12. About Asn-linked sugar chains and Ser/Thr-linked sugar chains 13. What is blood type? 14. [Preparation] The class begins with a basic lecture on carbohydrates, which will be easier to understand if you have a background in basic organic chemistry, biochemistry, enzyme chemistry, etc. in particular 〇Many structural formulas of carbohydrates appear. Those who have studied the structure of monosaccharides may want to review it. 〇Basic parts of organic chemistry (isomers, chemical bonds, etc.) 〇Cell structures of microorganisms, plants, and animals (intracellular organs, cell walls) |
